Ingredients
- 4 Large Tomatoes, diced
- 5 Cloves of Garlic
- 3 Cups of Alfalfa Sprouts
- 3 Cups of cooked Quinoa
- 4 Tbs Olive Oil
- 1/4 Cup Basil
- 2/3 Cup Feta Cheese
- 1/4 Cup Lemon Juice
- Sea Salt, to taste
Preparation
Saute garlic in olive oil on medium heat until garlic is *lightly* toasted. Remove from heat, add feta cheese and stir to soften and warm feta.
Transfer to a big bowl. Add the rest of the ingredients and toss.

I did a quinoa salad for the boys today, just cucumbers, feta and a vinaigrette dressing. It was kinda in a rush and i didn’t have to to add anything else, but next time i will. They liked it!
