Almond Sunflower (& Fruit) Cereal

This morning, I made a delicious new cereal for the twins. It’s a recipe I adapted from Jennifer Cornbleet’s RAW FOOD MADE EASY FOR 1 OR 2.

If you’ve been reading this blog for very long, you know how much I love Jennifer and her recipes.

It took about 5 minutes to prepare. . . and the boys LOVED it!!

This whole-foods cereal is very nutrient-dense.

It’s rich in antioxidants, vitamins and minerals, mono-unsaturated fatty acids (the type of fat that you’ll find in many Mediterranean dishes), phytonutrients and fiber.

It’s also delicious and extremely satisfying. :)

I’ve had some bad luck with new recipes lately, so I’m pleased that this one turned out so well. Especially given how simple it is.

INGREDIENTS

Yield: 2 servings

  • 4 tablespoons soaked raw almonds
  • 4 tablespoons soaked raw sunflower seeds
  • 1 sliced banana (You can add ANY fruit.)
  • 1 cup of raisins or chopped dates
  • 1 cup almond milk (Or coconut milk)
  • 2 tablespoons cinnamon
  • 1 tablespoon nutmeg (Optional)
  • 1 Teaspoon organic pure maple syrup or raw honey (Optional)

PREPARATION

Combine ingredients in a small bowl. Soak in milk for 20-40 minutes.

You can serve with almond or coconut milk. If your family drinks dairy, you can use that, too. (Definitely try to make it organic, though, to reduce ingestion of residual antibiotics, pesticides and hormones.)

Since my sons are only 20-months, I grind the nuts prior to soaking. I just pulse them in a food processor until they’re coarse. Then, I throw all the ingredients in a big bowl with the almond milk and let them soak for 20 minutes.

It’s definitely a breakfast we’ll re-visit again and again.
